easy cupcakes

Miss A and I made these yesterday and they are so easy to make and are absolutely delicious!  I got the recipe from a thread on the Essential Baby forum so thank you so much to whoever it was that posted it.  I’m really no good at making cupcakes and these ones just turned out perfectly.

Easy Cupcakes

Pre-heat oven to 180C/350F.

Break 2 eggs into a 1 cup measure.  Fill to the top with thickened cream.  Place in bowl and beat for 1 minute.

Add 1 teaspoon vanilla essence and 3/4 cup caster sugar.  Beat for 3 minutes.

Add 1 cup SR flour and mix well.

Spoon into cupcake tins, bake for 15-20 minutes until golden.  Cool and ice as desired.

Twice in the last week I’ve spoken to Dad and he sounds SO GOOD! The palliative care doctor has put him on steroids and his appetite has improved enormously as well as the colour coming back to his face and he’s generally feeling stronger. Getting over a round of radiation has also helped him feel better too.

I just can’t believe how much stronger he sounds, so much like his old self. I know that it won’t last forever but I’m just so pleased to hear him sounding well and happy.

Miss A and I are heading up to spend a week with Mum and Dad during the school hols. I’m looking forward to it so much!  I want to spend as much quality time with them as I can, the fragility of life really hits you over the head when someone is terminally ill. Make ever day count and don’t sweat the small stuff… really, it’s true.
